We’re thinking an Australian oyster should only be paired with an Australian native - with this little oyster dressing, addressing all our concerns and offering a native alternative to Oysters Kilpatrick.
INGREDIENTS
24 oysters (two dozen), shucked and cleaned with any shell fragments removed. Plate and sit in the refrigerator until ready to serve.
DRESSING
125 ml white wine vinegar
1½ tsp honey
3 tsp wasabi paste
30 ml soy sauce
50 ml lemon aspen juice
pinch dried Salt Bush, ground (you can dry by hanging a small bunch of leaves upside down in a dry and airy place away from direct sunlight).
pinch pink lake salt
lime juice, to taste
METHOD
Add your wine, honey, wasabi, soy sauce and lemon juice into a bowl and whisk. Add remaining ingredients and whisk until combined. Spoon over fresh oysters to serve.
