NATIVE AUSTRALIAN OYSTERS

We’re thinking an Australian oyster should only be paired with an Australian native - with this little oyster dressing, addressing all our concerns and offering a native alternative to Oysters Kilpatrick.


INGREDIENTS

  • 24 oysters (two dozen), shucked and cleaned with any shell fragments removed. Plate and sit in the refrigerator until ready to serve.

DRESSING

  • 125 ml white wine vinegar

  • 1½ tsp honey

  • 3 tsp wasabi paste

  • 30 ml soy sauce

  • 50 ml lemon aspen juice

  • pinch dried Salt Bush, ground (you can dry by hanging a small bunch of leaves upside down in a dry and airy place away from direct sunlight).

  • pinch pink lake salt

  • lime juice, to taste

METHOD

  1. Add your wine, honey, wasabi, soy sauce and lemon juice into a bowl and whisk. Add remaining ingredients and whisk until combined. Spoon over fresh oysters to serve.
