SALT BUSH LEAVES STIR-FRIED MY WAY

Salt Bush leaves are great as a side infusing a natural saltiness to your plate. Turn up the heat with this super simple fry that’s ready in minutes.


INGREDIENTS

  • 3 tbsp peanut oil

  • ½ tsp salt flakes

  • 3 cloves garlic, crushed

  • 200 g fresh Salt Bush leaves

  • 2 tbsp organic tamari

  • 3 tbsp stock

  • ½ tsp sesame oil

METHOD

  1. In a deep frypan heat your oil to 180˚C. When ready your oil will appear to shimmer. Season the oil with the salt flakes and garlic before adding the Salt Bush leaves, stir-frying for about 3 minutes.

  2. Add the tamari and continue to stir-fry for a further minute. Add the stock and continue to stir-fry for a further minute before finally adding a splash of your sesame oil. Serve immediately.
